Recipes demonstrated with visiting International Chefs

These easy recipes which utilize the star ingredient, Potato, were enjoyed by the chefs in attendance.

Chinoise Café CURRY PUFF

Filling:

  • 1 medium red onion (finely chopped)
  • 1 teaspoon yellow curry powder
  • 1 teaspoon chili powder
  • 1 cup of grounded chicken
  • 1 1/4 cup frozen mashed potato
  • ½ cup chopped pineapple (fresh or canned)
  • ½ cup thawed peas
  • 1/4 cup chopped cilantro
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 package of square wonton wrappers (about 24)

Directions:

Make the filling first, Heat oil and fry onion until golden brown. Add the curry powder, chili and fry gently. Add the chicken, potato, pineapple, peas, cilantro, sugar, pepper, salt and cook for 5 minutes. Mix well and leave aside to cool.

Place 1 tablespoon of the mixture in the center of the wonton skin, wet the edges with water, fold down diagonally to form a triangle. Press gently on the edges to seal.

Heat oil in wok and when it is hot enough, deep fry the dumplings for about 2-3 minutes, or until golden brown. If using a deep fryer, preheat oil to 180°C /350°F before adding the wontons. Drain excess oil before serving.

steak fritesChinoise Café VIETNAMESE STEAK FRITES

Ingredients:

  •  1 1/2 pounds beef tenderloin or ribeye steak, fat trimmed and cut into 2 inch cubes
  • 5 cloves crushed garlic
  • 1 tablespoon sugar
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  •  1 red Bell Pepper julienne
  • 1/2 medium yellow onion
  • 1 tablespoon Maggie
  • 8z fried shoe string potato frites
  • 1/2 teaspoon fresh cracked pepper (optional) Chopped fresh cilantro

Directions:

Combine garlic, oyster sauce, sugar, fish sauce, soy sauce in a shallow container, set aside.

Fried potato frites – set aside

On a heated wok or pan, add 1 tablespoon vegetable oil, add garlic till fragrant add beef.

Sautéed beef until it is lightly brown, add sauce stir fried for a few minutes until hot again. Then add onions, bell peppers stir till 80% done.  Add potato frites; stir lightly making sure all sauces coats the frites, it is ready to be served.

Served with rice accompany with slices of tomato and cucumber. Cheers!
